What Color is Your Diet?

David Heber, M.D., Ph.D.

The conversion of homocysteine into methionine and cystathione is orchestrated by three of the B vitamins: folate, vitamin B12, and vitamin B6. Plant proteins, by comparison with meat proteins, contain much less methionine. Since the ancient human diet was plant-based, there was much less methionine than in today's diet, and genes were selected that optimized the ability of the body to make methionine from homocysteine. The enzymes that performed this function were helped by b vitamins and folic acid, which were also present in large amounts in plant foods.

The types and environmental factor greatly influence the b vitamins content. Vitamin content of grapes increases during maturation, except for biotin which decreases. Leaves are rich in carotenoids. Their content reaches the maximum value when vine is at full bloom. Leaves contain thiamin, niacin, biotin and tocopherol, and are richer in ascorbic acid than berries. Grapes are a good source of bioflavonoids (vitamin P), which are known to be useful in purpurea, capillary bleeding in diabetes, inflammation from injury, radiation damage and arteriosclerosis.

Vegetables are rich sources of vitamins A, C, and K, several b vitamins, and a range of minerals. They are also phytochemical powerhouses. While variety is the real key to maximizing the benefits from these foods, dark green leafy vegetables definitely stand out as being especially protective. Make vegetables the central part of your meals for at least one or two meals each day. Include both cooked and raw vegetables where possible. Keep washed, cut-up vegetables in the fridge as handy snacks. Legumes (4 to 6 servings) Legumes are important sources of protein, iron, and zinc.

Celery Juice Celery juice is an excellent source of the B vitamins; vitamins A, C, and E; and the minerals calcium, iron, magnesium, and potassium. It has a natural diuretic effect, helps to regulate body temperature, and aids in the elimination of carbon dioxide from the body. It is good for arthritis, appetite, adrenal function, and weight loss. Celery juice is useful for combating dizziness and headaches, aids digestion and weight loss, and stimulates adrenal function.

The Vitamin Revolution in Health Care

It was thought at one time that you had to take equal amounts of all the b vitamins to be balanced. This is not quite true, since some people need different amounts of each one for their particular metabolism, and high doses of individual b vitamins may be therapeutic for specific conditions. Brief examples of the therapeutic use of some of the B complex include the treatment of carpal tunnel syndrome and PMS with pyridoxine (B6) and the treatment of mental illness and high cholesterol levels with niacin (B3).

It is a good source of minerals, the b vitamins, and vitamins A and C. Carrot juice is excellent for treating diarrhea (even in infants) and intestinal infections and other disorders. The fresh juice contains sufficient quantities of calcium to help build and maintain strong bones and healthy teeth. It protects the nervous system, increases energy, can help ward off infections, and enrich a nursing mother's milk. Many skin problems, such as eczema and psoriasis, have responded favorably to carrot juice therapy. Even normal skin responds with an improvement in texture.
Chlorella Chlorella is a tiny single-celled water-grown green alga that contains the highest chlorophyll level per ounce of any plant, as well as protein (nearly 58 percent), carbohydrates, all of the b vitamins, vitamins C and E, amino acids (including all nine essential ones), enzymes, and rare trace minerals. It contains more vitamin B12 than liver, plus a sizable amount of beta-carotene. It is also high in the nucleic acids RNA and DNA. It is virtually a complete food.
If you feel you need a little sweetener, use blackstrap molasses, which is rich in minerals and b vitamins. It is a good source of usable iron because it is easily assimilated. It has the least sugar of any type of sweetener. THE RECIPES Vegetable Broth II Lemon Quality Water 2 quarts quality water Juice of 3 lemons Vi teaspoon stevia or blackstrap molasses (optional) Place the water in a pitcher. Stir in lemon juice and add stevia or molasses for sweetness. Serve at room temperature.
Key nutrients in spelt include protein, fiber, b vitamins, iron, copper, manganese, vitamin A, calcium, and potassium. Phytochemicals include lignin. Sunflower This seed of the sunflower plant can be used to make a flour that can add a lot of nutrients to baked goods and is especially good in cookies. Use it to replace a portion of the flour in your favorite recipe. If you grind your own sunflower seed flour at home, make sure the seeds are fresh. Select packages that contain few off-color or dark seeds.

This gives your body the b vitamins for your nervous system and also a healthier elimination. Don't Worry About Bowels During the Fast One of the greatest worries most people who fast have during a fast lasting from 3 to 10 days is that their bowels may stop moving. Let me emphasize that you shouldn't worry about bowel movement during a fast! This will adjust itself shortly after each fast is ended, so forget all about bowel movements and think about the wonderful purification that your body is experiencing. Mother Nature's plumbing system works perfectly if you will allow it to.

The American Indians processed corn using potash (which is highly alkaline) that makes the b vitamins in corn available for assimilation during digestion. But the American settlers, not understanding how to prepare corn, would simply grind up their corn and consume it as corn flour (corn meal). By the way, that's how most people eat corn today: as ground up cornmeal ingredients in chips and foods.

A classic example is the combination of b vitamins needed to lower homocysteine. This toxic protein in the blood is an incredible predictor of disease risk, not only for cardiovascular disease, but also for depression, Alzheimer's disease, miscarriage and the risk of birth defects, and many more conditions (see chapter 16). Lowering homocysteine, and hence lowering risk, is easy if you know how. You need an optimal intake of vitamins B6, B12, and folic acid, plus B2, zinc, magnesium, and trimethyl glycine (TMG). Few medical studies, however, have taken this on board.

Alcohol creates deficiencies in b vitamins, magnesium, and calcium, which upsets hormone imbalance. Further, alcohol damages the liver, which then interferes with hormone metabolism. ANIMAL PROTEINS are loaded with hormones and synthetic antibiotics that throw our own hormone levels out of balance. BIRTH CONTROL PILLS deplete the body's b vitamins, which are needed for natural hormone production. The pill increases the tendency toward allergies and liver problems, which can affect hormonal balance. CAFFEINE is found in coffee, tea, chocolate, soft drinks, and certain medications.

Antibiotics, for example, wipe out the healthy gut bacteria that manufacture significant amounts of b vitamins. They also pave the way for unfriendly bacteria to multiply, which increases the risk of infection, thereby stressing the immune system. This can then lead to nutrient deficiency. Meanwhile, the U.S. National Institutes of Health estimates that more than fifty thousand tons of antibiotics are used every year throughout the world. In summary the twentieth century has fundamentally changed the chemical environment of every species.

Alcohol destroys b vitamins, magnesium, and chromium, and can be a potent depressant for some people. Limit caffeine, as it intensifies anxiety and contributes to fibrocystic breast disease. Limit dairy products. They are high in fat, interfere with magnesium absorption, and may cause constipation. Limit fat intake to 30% of total calories. Limit the consumption of cold foods. Limit protein intake to 1 g/kg of body weight. Avoid licorice. Licorice stimulates the production of aldosterone.

Fresh fruit and vegetables provide significant amounts of vitamin C and b vitamins, while vegetables and seeds such as sunflower and sesame are good sources of calcium and magnesium. For maximum effect, however, it is best to supplement these nutrients as well as eat foods rich in them. Green tea Tea Coffee Cola or caffeinated drinks Caffeine pills (e.g.
The trouble is, if you don't have optimal amounts of b vitamins in your diet, the enzymes that turn homocysteine into these beneficial substances don't work well enough. Your homocysteine can't be converted, so your level of it rises dangerously (see figure on the next page). To make matters more complex, it has been discovered that one in ten people has an inherited genetic mutation that makes them more prone to a higher homocysteine level than other people. This means that the enzyme that 137 converts homocysteine into SAMe (it's called the MTHFR enzyme) doesn't work so well.

Brown rice provides complex carbohydrates, b vitamins and vitamin E, calcium, iron, phosphorus, and significant levels of fiber. (A cup of brown rice adds nearly 3.5 grams of fiber, while a cup of white rice has less than 1 gram.) Semipolished rice, which still has the whole germ, contains high amounts of the grain's original nutrients and fiber. Polished rice, the type most of us generally eat, has had the husk and bran completely removed and contains fewer vitamins, minerals, oils, and fiber than either semi-polished or brown rice. Brown, obviously, is the nutritional winner.

They also contain a wealth of b vitamins, trace minerals, and some calcium. For many people, increasing legume consumption is one of the toughest dietary adjustments they make. Most of us didn't grow up eating many legumes, so we just don't know what to do with them. In addition, people may initially find legumes hard to digest and complain of bloating and gas. The best way to incorporate legumes into the diet is to start small. Add them to soups, stews, pasta sauces, salads, and stir-fries.

Supplementing b vitamins, which lower homocysteine, an often ignored risk factor greater than cholesterol, can also halve the risks of both heart attacks and strokes.2 Contrary to popular belief, the risk of death from many common types of cancer is increasing, not declining. Consider breast cancer, which accounts for one-third of all cancers diagnosed in women and around forty thousand deaths each year in the U.S. If treatments were working, women with breast cancer would live longer and be at less risk of dying.

You will gain the benefit of the b vitamins, vitamin E, and the other vitamins and minerals found within the whole foods. TESTING THE FIVE FORCES OF ILLNESS Recent years have seen an explosive growth in commercial laboratories offering specialized testing in various aspects of the five forces. This testing can be helpful in identifying which of these forces are present, and to what degree. There are many tests that you can take; below is just a sample of what is available. Many of these tests can be ordered from the same commercial labs used by your doctor's office or local hospital.
He also had nutritional problems, including a deficiency of essential fatty acids and the b vitamins, as well as an inflamed and overworked liver. And, because of his impaired liver function, Stan could not process medications well. He also tested for high levels of mercury in his system. To make matters worse, he was under chronic stress, which was one of the factors causing his depression. Unfortunately, when someone has chronic stress and depression, his or her adrenal glands (the stress glands) start overproducing the hormone Cortisol. Cortisol is one of our stress hormones.
These beneficial bacteria also perform chemical transformations such as synthesizing vitamins and nutrients—for example, they manufacture vitamin K and many of the b vitamins. They also digest foods such as flaxseed and soy, and change them into molecules possessing anticancer properties. These bacteria have an excellent symbiotic relationship with us. They thrive because we feed them, and we benefit from their helping us digest food and produce important nutrients that we absorb into our bodies. These bacteria also serve another function: They crowd out other, nastier flora in the gut.
More important, if found to be elevated, homocysteine can be easily lowered using the correct dose of b vitamins such as folic acid, B6, and B12. (What is homocysteine? You'll find out on page 42.) 3. Like anyone else who reads the papers regularly, you have become increasingly aware of the dangers in our day-to-day environment. But because it sometimes seems as though everything can be hazardous, it's hard to remember what's really bad for you. This weekend you are going to a friend's country home where you may encounter all of the following.
We also recommend vitamins to support the liver, such as the B vitamins; minerals including magnesium, choline, and lecithin; and certain foods, including garlic, onions, broccoli, cabbage, brussels sprouts, kale, and cauliflower. This brings up what we call the NCR concept. We believe we should all be eating foods with a high nutrient-to-calorie ratio, or NCR. We want our patients to eat foods that offer many nutrients, but not many calories. When a diet is predominantly composed of foods that are high in calories but low in nutrients, you will find a high level of oxidative stress.

Similarly, b vitamins have been shown to affect the behavior of so-called hyperactive children. The effective synthesis and assimilation of b vitamins requires the additional minerals calcium and cobalt. Professor Ruth F. Harrel, a researcher at Old Dominion University in Norfolk, Virginia, led a study to determine whether nutritional deficiencies could be a plausible cause for slow learning and mental retardation and, if so, if it would be possible to treat these conditions with vitamins and minerals. The results were, in her own words, "so extraordinary, that I was scared to believe them.

Starchy vegetables are good sources of vitamin C, vitamin A, and b vitamins. (Orange and yellow vegetables contain much higher levels of vitamin A in the form of beta-carotene.) All types of potatoes, corn, winter squash, and plantain are good choices. Keep the skin on the potatoes to increase both nutrients and fiber content. Vegetables (4 or more servings) Vegetables are the most nutrient-dense foods in the diet. That means they provide the highest levels of nutrients for the fewest number of calories.
