The earlier one starts eating soy products, the better—according to a recent study published in Carcinogenesis. Phytonutrients, also known as phytochemicals, are naturally occurring substances that give plants their characteristic flavor, color, aroma, and resistance to disease.
We get our phytonutrients from plant foods such as vegetables, fruits, nuts, seeds, grains, and legumes. Thanks to a great deal of research that's been done over the last few decades, we know many of the health benefits of these substances—and there are more than we suspected. Isoflavones—Soy is a rich source of phytochemicals called isoflavones, hormonelike compounds that mimic the action of hormones in the human body but are far weaker. Researchers believe that isoflavones may inhibit the growth of particular types of tumors that are hormone dependent, that is, whose growth is stimulated by hormones that occur naturally in the body. The theory is that these plant hormones bind to receptors on hormone-dependent tumors that would normally be occupied by the body's own more potent hormones that would trigger growth. |
However, recent research reveals that vitamins and certain phytochemicals may also help.
Vitamin E—A study by the National Cancer Institute, Division of Cancer Etiology in Bethesda, Maryland, suggests that vitamin E may slash the risk of oral cancers by half. In this study, researchers compared the vitamin intake of 1,100 people with oral cancer to nearly 1,300 cancer-free people. One striking fact emerged from this study: Those who took vitamin E supplements showed a substantially lower risk of developing oral or throat cancers. |
