Some potential anticancer agents in milk: calcium, riboflavin, vitamins A, C and D. "Or the key component may be something we haven't even identified yet," he says. "Heavy meat eaters are more vulnerable to cancers of the pancreas, colon, lung and breast. The risk jumps even higher if you smoke and do not eat green and yellow vegetables every day.

The amounts of vitamins that restored top mental functioning in the study were so small—just the recommended dietary allowances (RDA)—that you need not take supplements to get them. You can get enough to protect your brain through food, says Dr. Penland. Thumbs Up: HOW* COULD YOU FORGET?—SEAFOOD IS BRAIN FOOD If your memory is sagging and your attention lagging, you may not be getting quite enough zinc. In startling new discoveries, scientists are finding that even marginal lacks of zinc can mildly impair mental functioning, including memory. "It's surprising," says Dr.
Antioxidant food substances, including vitamins, can snuff out carcinogens, and even repair some of their cellular damage. Even after cells have massed into still-benign tiny structures that can grow into dangerous tumors, food compounds can intervene to stop further growth or actually shrink the patches of precancerous cells or eruptions! Diet, though far less powerful at later stages, may still influence the metastasis or spread of cancer. Wandering cancer cells need the right conditions in which to attach and grow. Food agents can foster a hostile or favorable environment.

Foods That Fight Disease: A Simple Guide to Using and Understanding Phytonutrients to Protect and Enhance Your Health

Molasses is mineral-rich and has a minimal amount of vitamins as well. These less-processed sugars don't require the body to work as hard at digestion as their more refined cousin, table sugar, does. Therefore, desserts made with less refined sugars are somewhat more desirable than those made with refined sugars. The three things that food manufacturers can manipulate to make commercially prepared food more appealing are salt, fat, and sugar. When they limit or reduce the amount of one of these ingredients, they often increase the amount of another.
Phytonutrients Under the umbrella term "phytochemicals" falls a subset of nutritive plant chemicals, called phytonutrients—biologically active plant substances that have been determined to be necessary to sustain life—in other words, vitamins and minerals found in plants. Ascorbic acid (the plant form of vitamin C) is an example of a phytonutrient. Unlike phytochemicals, phytonutrients have been determined to be necessary to promote life, and Recommended Dietary Allowances have been established for them by the National Academy of Science.
Scientists say that the increases in plasma ORAC can't be explained fully by increases in levels of the separate antioxidant vitamins. They theorize that the body must be absorbing other compounds from fruits and vegetables. (Might these "other compounds" be the up-and-coming phytochemicals?) described above appear to be imperative in the prevention of cancer and cardiovascular disease. Preventing Nitrosamine Production Some phytochemicals offer disease protection by preventing the activation of nitrosamines in the stomach.
As we now select foods for the energy, vitamins, and minerals they offer, we may soon be finding ourselves choosing foods for their particular phytochemical content and the specific disease-fighting mechanisms they have to offer. 2 The History of Phytochemicals Phytochemistry is the branch of science that studies plant chemicals. It's not a new, glamorous, or exciting field—at least, not until now. The quiet world of phytochemistry has been energized by the discovery that phytochemicals found in food can prevent and fight disease.
That story, touting certain beneficial chemicals in plants as the disease-protective equivalent of vitamins and minerals of the twenty-first century, poised the term "phytochemical" for entry into the realm of everyday language. In Search of Phytochemicals Information on the disease-fighting properties of phytochemicals finally has emerged after decades of scientific detective work.

But other fats are just as important as vitamins and minerals for good health. These fats, called essential fatty acids, are important cogs in the body's metabolic machinery. Moreover, there's good evidence that they can be used in therapeutic doses to overcome some of our most serious health threats. Unfortunately, most Americans don't get anywhere near the optimal amounts of essential fatty acids (EFAs). Paradoxically, this is largely due to "advances" that were made in the last century.

An excess of sweet food acidifies the blood, destroys B and other vitamins, depletes the body of minerals—all of which cause unhealthy hair, among other problems. Note: In very early chronicles of Chinese medicine, the sweet flavor was usually defined in terms of whole food such as nonglutinous rice, dates, and mallows. *The effects 3,4, and 5 are present in many but not all sweet foods. For example, numbers 3 and 4 do not apply to the majority of fruit, which is generally not the proper food for deficiency, coldness, and weakness.
These devitalized foods are deficient in the vitamins, minerals, and enzymes necessary for regulating glandular secretion and proper digestion. Whole foods, therefore, are preferable. Moderate regular exercise is also essential for a smooth flow of blood and energy through the body, and for overcoming the stagnancy of excess weight. Fat and muscle are often shed at an equal rate during weight loss, and exercise helps the body maintain its muscle mass, thereby protecting the heart and other muscles from deterioration.
Supplements: Synthetic vitamins and inorganic minerals seem to work best for individuals with strong, robust signs (see "Excess" in following chapter), although they may benefit others also. Whole food supplements such as wheat- or barley-grass concentrates, sea vegetables, chlorella, and spirulina may be more beneficial for long-term use. Sprouts are a superb source of nutrients and can adequately supplement most grain and vegetable diets; however, they should be lightly cooked and used sparingly by individuals who are cold, weak, or frail. 5.

A Dose of Sanity: Mind, Medicine, and Misdiagnosis

What vitamins or minerals does the patient take? Vitamin/ mineral supplements are generally harmless and often therapeutic, but excessive intakes of some nutrients can cause neurological symptoms. I once diagnosed a young girl whose seizures, behavior problems, bone pain, and dry and kinky hair were caused by excessive intake of vitamin A. Overdoses of vitamin D can also cause "mental" symptoms such as fatigue, despondency, and even psychosis.
What medications, vitamins, or over-the-counter drugs are you currently taking? Cases like Bill's aren't rare, and some patients are particularly at risk. Among them are people over 60, who are often misdiagnosed as having "depression" or "dementia," and children, who are being labeled as "hyperactive" by general practitioners at an alarming rate (more on both of these high-risk groups later). And be especially wary of DSM syndrome if you're a woman: a number of studies show that doctors dismiss women's complaints as psychosomatic far more often than they do men's complaints.
Conversely, a poor diet low in vitamins or minerals can cause severe behavioral disorders; iron deficiency, for instance, can cause irritability, fatigue, and symptoms labeled as "conduct disorder" or "hyperactivity." • Does the patient eat unusual foods, eat too much or too little, or have unusual reactions to any foods? Eating habits can indicate allergies, anemia, and other conditions that can cause severe "mental" symptoms.

The biggest gains came after treating her for sugar, B vitamins, and minerals. We also used the technique in our work to examine and change limiting beliefs we held. We found that doing a treatment for a core belief could clear a number of allergies without treating for the specific allergens. The first belief we worked with was "it is not safe to be fully present on the Earth." Patricia kept getting stronger and more energetic with each treatment.

Physicians agree that the best way to incorporate EFAs in your diet is to get them from foods rather than supplements; when you eat whole foods you also get healthy amounts of vitamins, minerals, and other essential nutrients. However, if you find it difficult to eat enough foods that contain EFAs, or if you have a health condition that requires larger amounts, your doctor may recommend that you get them in supplement form. Fish oil is among the best sources of EFAs.

Sprouts are high in vitamins, minerals, and enzymes and support fast growth in babies and children in general. Use sprouts more often in the spring and summer and less in the fall and winter, and also less for children and infants who are weak, pale, and passive (deficient). Alfalfa sprouts in particular are too cooling and cleansing for the frail child. See "Sprouts" in the recipe section for directions on making sprouts.

Supplements of folic acid and other vitamins offer some protection against some fetal malformations, such as neural tube defects. Restaurants carry signs warning against ingesting alcohol during pregnancy. And for those who receive regular prenatal care, attention to a balanced diet throughout pregnancy has become a given. But despite the new vigilance, one nutrient group has fallen through the cracks: the omega-3 oils, necessary not just for evolution of the human brain but also for its growth in the womb.
The Antioxidant Boost Hope of developing a natural treatment for schizophrenia is strengthened by recent evidence that vitamins C and E might boost the EPA effect. In research out of the Medical College of Georgia in Augusta, psychiatric researcher Dr. Sahebarao P. Ma-hadik has found that patients with schizophrenia contain very high blood levels of biochemical markers of what lipid scientists call lipid peroxidation—the oxidation, or chemical destruction, of fatty acids by oxygen and other highly reactive chemicals, such as free radicals, in the body.
C and E to conventional antipsychotic treatments for schizophrenia and some other associated disorders. His results suggest that the patients who received adequate amounts of vitamin C—at least 1,000 milligrams per day—and vitamin E—at least 800IU (International Units) per day—fared better than the patients who did not receive these supplements. Mahadik believes that both antioxidant vitamins are necessary. Vitamin E is soluble in fat. Since the cell membrane is made mostly of fat, vitamin E stays in or near the cell membrane.
Based on his research, Mahadik suggests that the therapeutic benefit of EPA might be enhanced with additional supplements of vitamins C and E. If confirmed, the antioxidant boost could extend beyond schizophrenia into bipolar disorder, major depression, and the other psychiatric and medical disorders where the omega-3 fatty acids have been shown to be beneficial.
Leafy and cruciferous vegetables such as broccoli are excellent sources of vitamins, minerals, and fiber. Dark-green leafy vegetables such as kale, spinach, parsley, and cruciferous vegetables contain coenzyme Q10 and glutathione, both components of cell-protecting antioxidant systems. Richly pigmented fruits and vegetables such as blueberries, cantaloupe, watermelon, and red peppers also provide antioxidant phytochemicals. Tomatoes contain both alpha- and beta-carotene, as well as lycopene, an extremely powerful antioxidant.

Protect Your Brain With vitamins and Minerals Sally was seventy-two years old when I first met her. She was suffering from such severe memory loss and depression that her family had been advised to place her in a nursing home. Her daughter brought her to my office in a last-ditch effort to see if anything else could be done. Sally was lethargic, and her answers to my questions were brief and incomplete. She could not give the correct year or name the president of the United States—commonly asked questions to determine a patient's mental state.

What medications, vitamins, or over-the-counter drugs do you take? Whom do you see during the day (family members, boyfriends or girlfriends, etc.)? What activities do you and your friends participate in? At what times during the day do your symptoms worsen? At what time do they bother you the least? Pay particular attention, when examining your activities during the day and night, to situations that either bring on or alleviate your symptoms. For instance, if your symptoms occur when you're home but not at work, check your gas heater or stove.

Viruses, head injuries, and excessive exposure to certain metals, most notably aluminum, may also play a role, as may deficiencies of nutrients such as vitamin A, vitamins B]2, vitamin E, carotenoids, and zinc. The illness begins slowly, usually manifesting itself initially as bouts of forgetfulness. These may be occasional at first, but eventually become more frequent. Ultimately, the disease progresses to a stage in which the individual must depend on others for all of his or her needs, both physical and mental.

Along with a gentle exercise program and the addition of important vitamins and minerals, this patient has continued to make a remarkable recovery. Many of my rheumatoid patients report rapid and substantial relief from symptoms with MSM. Previously, if I was unable to help severe cases, I would refer them to a specialist. Now, I find this amazing supplement helps even the most severe conditions and gives me a substantial therapeutic tool. It doesn't restore destroyed joints but it makes the lives of patients much more comfortable and also produces many other side benefits.
