Alfalfa is up to 30 percent protein by dry weight and is an excellent source of chlorophyll, vitamins K and P (bioflavonoids), and carotene. Almost as good as seaweed as a food mineral source, alfalfa contains calcium, iron, magnesium, potassium, manganese, phosphorus, sodium, sulfur, silicon, chlorine, cobalt, and zinc.
Use While mature alfalfa is typically fermented into silage for cattle, for human consumption it is sprouted and its pea-flavored leaves are used in salads or as a medicinal tea and herbal supplement.

However, in contrast with the other vitamins present in human nutrition, its exact biochemical role remains unknown.
Vitamin E does not appear to play roles in reproduction and lactation in humans as it does in such animals as rats, and overt deficiency states of this vitamin are rare. Deficiency states of vitamin E, however, do exist in humans, and sub-optimal nutriture of the vitamin may increase the risk of certain degenerative disorders, such as coronary heart disease, Alzheimer's disease and cancer. |
These vitamins are added to olestra. Olestra contains 8 micrograms of vitamin K per gram.
DOSAGE AND ADMINISTRATION
There is no typical dosage for vitamin K. Some multivitamin preparations contain vitamin K as vitamin Ki (phylloquinone or phytonadione) or vitamin K2 (menaquinones) at doses of 25 to 100 micrograms. The amount of vitamin K in these products is stated as the percentage of the daily value (DV) for vitamin K. The DV is the highest RDA for the vitamin, or 80 micrograms. Vitamin Ki is also available in 10 milligram doses. |

Deficiency in each of the vitamins and minerals listed above will produce a set of symptoms that can usually be distinguished from each other. For each deficiency, there is often a range of possible symptoms and sets of symptoms. Sometimes, the number of variations in symptoms for one deficiency can be quite surprising. When compounded by the interaction of several or many deficiencies, the range of signs and symptoms can be enormous and quite confusing. |

A probiotic supplement also aids in the digestion of protein, fats, and carbohydrates and the assimilation of vitamins. When selecting a probiotic supplement, choose one that lists the viable cell count and identifies the organisms. Most probiotic supplements require refrigeration.
Substances that decimate intestinal flora include broad-spectrum antibiotics, some other medications, antiseptic mouthwashes, alcoholic beverages, and chlorinated drinking water.
Buying Unfortunately, the fermented foods most often found in markets and restaurants are dead—rather than living—foods. |

The more we really understand the vitamins, minerals and other food substances the more good we discover can be said about them.
Over and over I find supplements being touted for all the wrong reasons—entirely or largely without scientific support. Meanwhile, really wonderful uses to which these substances could be applied (as suggested by sound research data) get entirely overlooked. Thus the consumer gets cheated twice: first by being given an erroneous "indication" or reason for using a supplement, second by not being told about a real indication for using the substance. |

It is hard to say, since there are no categories for antioxidants, vitamins, or nutritional therapies, to choose from. There may be a handful hidden away. But nutritional treatments are not being seriously investigated by many American oncologists.
Is it any wonder, then, that your own oncologist may be unaware of the positive developments in this field? For most of them, oncology means their own narrow discipline. It is time for there to be a broader definition of oncology, one that incorporates nutritional treatments based on the latest scientific findings. |

_Vitamin A/Beta-Carotene
I. OVERVIEW: The "Miracle" Vitamin
Vitamin A, among nutrients, continues to be the real newsmaker, grabbing headlines everywhere. Some decades ago it was already being called "the anti-infective vitamin." A few years ago it generated excitement anew as its anti-cancer properties began to emerge from studies being conducted around the world. |
Nutrition is central to all of this, including "micronutrition," the vitamins, minerals and other health-giving components of our food. We are discovering that through the manipulation of nutrition, and especially micronutrition, we can not only treat but, in many cases, prevent the ills that we once accepted as inevitable. And we can often do so without always having to resort to costly and, not infrequently, ineffective medications that come freighted with adverse side effects. |
For many years, friends, patients and fellow doctors, familiar with my background as a biochemist, researcher and medical doctor with a strong interest in human metabolism, diet, nutrition, and experimental and preventive medicines, have asked me where they could get objective, well-documented information on vitamins, minerals, amino acids and other food supplements. Among their questions were these: Which supplements, if any, are worth taking? Is there good evidence suggesting that these supplements are really helpful? Which substances are safe and in what doses? |

Besides this, the tea's polyphenols act in concert with the vitamins C and P present, helping to strengthen the blood vessel walls of the heart.
Tea Removes Dental Plaque
During 1983-84 dental scientists at Washington University in St. Louis conducted a series of experiments proving that black tea definitely inhibits the growth of decay-causing bacteria common to plaque buildup on the teeth. This is probably due to the high natural fluoride content found in both teas. |
Furthermore, parsley ranks higher than most vegetables in an important amino acid, histidine, which strongly inhibits tumor development within the body, according to Mutation Research (77: 245-50). And vitamins A and C are now recognized as significant nutrients in the fight against cancer. Therefore, it seems we'd all be better off eating more parsley than just leaving it on our plates. |

Pharmacopoeia (USP), the organization that sets the nation's drug-composition standards, adopted a voluntary supplement-dissolution standard saying that vitamins should disintegrate in the digestive tract within 45 minutes. Look for a label statement like the one Leiner Health Products uses on the store brands it formulates for Safeway, Kmart and Wal-Mart, among others: "This product is specially formulated to pass a rigid 45-minute laboratory dissolution test." Dissolution means "dissolve." Disintegration means "break into tiny pieces." Forty-five-minute dissolution is what you want. |

It works just as well for influenza, but I would recommend the addition of vitamins A (50,000 I.U.) and C (5,000 mg.) each day and plenty of rest until the person was well.
Deafness, No; Migraine, Yes
As with so much of folk medicine, there is always going to be much that has medical merit and some interwoven with the rest that is more lore and legend than anything else. This was true in Zeke's case: he claimed that his "best cures" using bergamot came when he applied hot/cold packs of the boiling/cold tea to the forehead for "long-standing deafness. |

Its leaves, and the leaves of many mint relatives like rosemary, contain generous amounts of vitamins C and E, some of which can be extracted in catnip tea or a mixed mint tea like my Cataractea.
In addition to antioxidants, the trace minerals magnesium and manganese appear to play a role in cataract prevention. Enzymes containing these minerals help dispose of proteins damaged by oxidation that contribute to eye clouding. Catnip and the other mints contain both of these essential trace minerals. |

It analyzes all the vitamins and minerals that have any genuine relevance as nutritional supplements. It does the same for the amino acids and many other substances. Each analysis is structured so that you can quickly and easily determine what the nutrient is, what it does—and doesn't—do, who it's good for, what ailments it can help treat or prevent, what amounts it should be taken in, what it should be taken with, what precautions apply and so on. This book provides more consumer guidance than any other currently on the market. |
Alcoholics who are phosphate deficient commonly have deficiencies of all vitamins, minerals and trace elements. If you believe that you are at risk for phosphorus deficiency, discuss with your physician a program that will get you back into nutritional balance, using the guidelines discussed throughout this book.
D) Cautionary Note: Phosphate supplementation is not a simple matter and requires diagnosis, discussion, and medical supervision.

The role of hormones and certain important agents in food, called vitamins, became clear in health care. During the first decade it was discovered that the absence of thiamine is the cause of beriberi and the absence of insulin production is the cause of one type of diabetes. Diabetes became treatable by the administration of insulin extracted from animals.
Psychology made further progress and was often based on experiments with animals. |

Other antioxidants are found naturally in foods, including vitamins, minerals, and phytonutrients. Therefore, we can consume valuable antioxidants found in foods that help to quench free radicals. Also, we can avoid foods that produce free radicals, such as fast foods, which are loaded with unhealthy fats such as hydrogenated oils.
In general, it's a great idea to avoid hydrogenated oils (found in margarine, vegetable cooking oils, packaged foods) and saturated fats (found in red meat and dairy products) that lead to the production of free radicals. |
These include vitamins B2, B3, B5, B12, biotin, and vitamin K.
Acidophilus is also important for proper absorption of minerals in the small intestine.
FOODS ON THE SIDE OF GOOD
Many societies throughout the world have recognized the health benefits of cultured foods that are high in acidophilus. Sauerkraut is one. This traditional German side dish is also taken for ulcers and a variety of digestive problems. Cottage cheese, kefir, and miso are other potential sources.
Yogurt, however, is probably the most convenient source of friendly bacteria. |
Enzymes, vitamins, and minerals are required for the metabolic pathways that convert amino acids into specific body structures, which include not only whole organs like your stomach, heart, or nerves but also the delicate, transient items like hormones and enzymes. The demand for certain amino acids increases when we are under stress, exposed to environmental toxins, afflicted with disease, and other factors.
THE BIG NINE
There are nine "essential amino acids." These must be ingested, as your body cannot manufacture them. |
Both doctors and patients rated glucosamine sulfate as being significantly more effective than previous treatments, which included NSAIDs, vitamins, and cartilage extracts.
Glucosamine is not a pain reliever, per se, so in general it doesn't work so swiftly as conventional drugs. But in the long run, I've found it relieves pain just as effectively as NSAIDs.
BETTER BUILDING MATERIAL
This supplement has another asset as well. Glucosamine helps rebuild cartilage or, at least, prevent further loss of cartilage. |

According to the Journal of the American Medical Association for June 23, 1951, which carried this report, the blossoms also contain vitamins A and B-2 (riboflavin). Steep a handful of freshly picked flowers in a pint of hot water for about 20 minutes. Drink 1 cup twice a day.

Carnitine
Although the use of lipotropic agents appears warranted in treating alcoholic fatty liver disease, many commonly used lipotropic agents, e.g. choline, niacin, and cysteine, appear to have little value.15,16 One lipotropic agent, carnitine, does significantly inhibit alcohol-induced fatty liver disease. It has been suggested that chronic ethanol consumption results in a functional deficiency in carnitine. |

About 20,000-30,000 IUs daily, preferably as beta-carotene, may be the best range, especially for those of us with some levels of anxiety and stress. If vitamins C and E are used, slighdy lower amounts of A are needed, since C and E help prevent the loss of stored vitamin A.
The upper intake, including diet and supplemental vitamin A, ranges from 50,000-100,000 IUs per day for short periods of a week or two. However, these amounts often produce some side effects over time. If no body deficiency or increased body needs of vitamin A are present, 50,000 IUs can cause problems. |

The measurement of the intermediates listed above provides a unique perspective to energy metabolism, along with clues on how to improve energy production by supplying B complex vitamins to assure adequate coenzyme concentrations. In cytochrome C oxidase deficiency, for example, there is inefficient removal of the primary product of the CAC (NADH), and citrate, malate, fumarate, and aKG are all increased.8 Coenzyme Q10 deficiency can also result in elevated CAC intermediates (see "Hydroxymethylglutarate" below). |
The key functions of nutrients like vitamins and minerals in the human body revolve around their role as essential components in enzymes and coenzymes. One of the key concepts in nutritional medicine is to supply the necessary support or nutrients to allow the enzymes of a particular tissue to work at their optimum levels. The concept of "biochemical individuality" was coined by nutritional biochemist Roger Williams in the 1970s to recognize the wide range in enzymatic activity and nutritional needs of humans. |
Other factors the RDAs do not adequately take into consideration are environmental and lifestyle factors which can destroy vitamins and bind minerals. For example, even the Food and Nutrition Board acknowledges that smokers require at least twice as much vitamin C as non-smokers. But, the effect of smoking on other nutrients and the effects of alcohol consumption, food additives, heavy metals (lead, mercury, etc.), carbon monoxide, and other chemicals associated with our modern society are not considered (for a comprehensive discussion of this important topic, see Ch. 108). |
