The second way is to add to the child's diet a mixture containing all the essential amino acids, essential fatty acids, and vitamins and minerals with enough fiber. Adding these substances to a good food will diminish their nutritional value. It is even worse when they are added to processed foods which have already lost a good deal of their nutritional value. Get enough vitamins and minerals. To make sure you're getting adequate amounts of vitamins and minerals—especially iron— consider taking a daily multivitamin supplement.
"Take iron supplements only as recommended by your doctor," suggests Dr. Stankiewicz. "B12 injections and prescription zinc medications are also available from your doctor." Over-the-counter zinc medications are not recommended, he says.
Wash away mouth infections. If glossitis develops while you're taking antibiotics for another infection, using a salt mouthwash can ease the assault on your taste buds. |

These substances interfere with the action and absorption of some vitamins and minerals. However, proper preparation of dried legumes—soaking and cooking—makes them harmless.
Beans are infamous for causing intestinal distress (bloating) and flatulence (gas). When sugars, starches, and fiber reach the large intestine without being digested or absorbed, friendly bacteria in the bowel consume them. Gas is a byproduct of this bacterial action. Bloating and gas are more likely if beans are not eaten regularly. |
For instance, white flour retains only 20 percent of the vitamins and minerals and 25 percent of the fiber contained in the whole-wheat kernel. For an illustration, of the effects of refining grain on the nutritive value of foods, see Table 11.1 below.
Today, most refined grain products are "enriched." That means they must meet standards set by the FDA for adding back the lost nutrients in amounts at or near the levels found in the original kernel.

Other Important Nutrients
In addition to fiber, carbohydrates, and high concentrations of protein, whole grains contain essential vitamins and minerals, including B vitamins (thiamine, riboflavin, and niacin), vitamin E, folate, calcium, selenium, iron, magnesium, and zinc. Grains also contain phytochemicals, the nonnutritive biochemistry to help to prevent disease. (See Chapter 7.) The main phytochemicals in whole grains are beta-glucans, lignin, tocotrienols, phytoestrogens, and phytic acid. They help to lower cholesterol and prevent cancer and heart disease. |

SELECTING VEGETABLES
Whenever possible, it is best to purchase organically grown vegetables. Commercial farmers' routine use of pesticides, herbicides, and fungicides can leave toxic residues in vegetables. Choosing organic vegetables, when available, eliminates the potential risk posed by these chemicals. (See Chapter 18. |
It is high in protein and contains virtually all the vitamins and minerals the body needs, plus chlorophyll for cleansing. Make sure the spirulina you buy is of high quality. Earthrise Spirulina from Earthrise Nutritionals is a good choice. Kyo-Green from Wakunaga is another excellent choice that contains additional nutrients.
Drink only quality water and plenty of it. You can dilute juices with it, but use only unsweetened juices with no additives. Do not use tomato or orange juice because of their high acidity. |
Choose cooking methods that minimize losses of vitamins and minerals. For vegetables, the best method is to steam the vegetables lightly and eat them while they are still crunchy. When steaming vegetables, use as little water as possible and save the water once they are finished cooking—use the vegetable water for soup stock so that you get the benefit of all the nutrients dissolved in the water. Avoid frying (with the exception of stir-frying) entirely. Always remember that every cooking method has its drawbacks and may destroy vitamin value to a certain extent. |

According to Dr Rudin, there is a rational explanation why both vitamins and minerals and essential fatty acids should all be therapeutic. The essential fatty acids are partially converted into prostaglandins. Therefore a deficiency of essential fatty acids will lead to a deficiency of prostaglandins. According to Rudin this is the cause of pellagra. But vitamin B-3 is also needed to assist in the conversion of essential fatty acids. Thus a deficiency of vitamin B- 3 will lead again to a deficiency of prostaglandins and yield a somewhat similar end result. |

Canned fruits lose varying amounts of vitamin C and beta carotene during processing (along with smaller quantities of other vitamins and minerals), and the processing turns their alkaline properties acidic and therefore detrimental to the body. Additionally, fruit packed in heavy syrup can be highly caloric. Freezing fresh fruit, however, has the effect of prolonging its life; the majority of frozen fruits are flash-frozen without having been heated, so there is very little nutrient loss, and most have no added sugar. |

They hope that the public remains generally ignorant and that people will never develop the same enthusiasm and affection for amino acids that they now have for vitamins and minerals. They are trying to forestall a problem they see developing which would go against their policies. The FDA should be restricted to making sure that all products sold are non-toxic (that is, less toxic than are the over-the-counter drugs they allow all drug stores to dispense so freely) and that the label requirements are met. I would be happier if they would put aspirin on prescription. |

Certain vitamins and minerals that are safe when consumed at low levels are toxic at higher doses. The difference between a safe low dose and a toxic higher dose is quite large for some vitamins and minerals and quite small for others.
A. Vitamin A
Vitamin A is found in several forms in dietary supplements. Preformed vitamin A (vitamin A acetate and vitamin A palmitate) has well-recognized toxicity when consumed at levels of 25,000 International Units (IU) per day, or higher. |

Lengacher and colleagues at the College of Nursing, University of South Florida, questioned a series of 105 women with breast cancer and found that 64 percent regularly used vitamins and minerals and 33 percent regularly used antioxidants, herbs, and health foods. Of the 105 women, 49 percent prayed and received spiritual healing, 37 percent went to support groups, and 21 percent focused on humor or laughter therapy. Massage was used by 27 percent of all participants at least once after diagnosis. |

The vitamins were not only found to be of benefit in a absolute sense, but were also of benefit to a far greater percentage of the children in the study than were the drugs which had been previously used. |
Excessive intake of dairy products crowds other foods out of the diet, foods which are richer in vitamins and minerals. Another factor is chronic inflammation of the intestine which decreases absorption of nutrients. I have already referred to protein deficiency caused by the milk. Another common deficiency is zinc and pyridoxine. I have been surprised at the large number of children I have seen who had white areas in their finger nails. This is due to a deficiency of pyridoxine and zinc. Most often these children are heavy consumers of dairy products. |

Recommended vitamins and minerals are vitamin C, vitamin A, and zinc. Actually, the best treatment is intravenous vitamin C, for which you have to go to a doctor. An extremely high dose of up to 50,000 or 75,000 mg streaming through the body will eliminate a lot of negative bacteria. Buffered vitamin C, taken daily in doses as high as 20,000 mg, will also create the necessary acidity in the urine. |
Or if you're an older patient with a few nonspecific symptoms such as fatigue, insomnia, and apathy, doctors jump to the conclusion that you're suffering from depression, instead of a lack of vitamins and minerals or a bad diet. If you admit to having stress in your life (and who doesn't?) then the doctor is further convinced that you're depressed. You may be told that you should learn to relax and slow down but, for a doctor, the easiest and most common treatment of depression is medication.

In fact, we are finding out that we just can't function properly without a wide array of vitamins and minerals that act as necessary cofactors in all the metabolic processes in the body.
And unfortunately the typical American diet does not provide us with enough essential vitamins. Because vitamin C and the B complex vitamins are water soluble and rapidly excreted from the body, they must be replenished daily. |

Many studies are being performed using herbs to treat cancer with excellent results. Zhao and a group at Shanghai University found that two Chinese herbal formulas, one called Chinese Jianpi herbs and one called SRRS, inhibit gastric cancer cell growth. |

The absolutely best cornmeal is stone-ground whole-grain corn, which retains not only the germ but also a robust flavor and the full complement of vitamins and minerals. The commercial supermarket's degerminated, overmilled, overheated, synthetic, vitamin-enriched cornmeal contains less than half the nutrients of whole-grain cornmeal and even less taste. Cornmeal can be made into a porridge known as cornpone or used in cakes, breads, tamales, desserts, and pancakes. |
When this starch in its original form is consumed, the same vitamins and minerals are available to be used by the body. When man refines carbohydrates and sugars, he produces starches and sugars free of the othet nutrients with which they are normally associated. This is one of the reasons why excessive consumption of sugar generally depletes the body's stores of vitamins.
