Since that time the European Union has placed a limit on the amount of vitamins and minerals that can be added to food.
And it isn't only in Europe. Feskanitch and colleagues followed 72,337 nurses from 1980 to 1998 and showed that women in the top 20% of vitamin A intake (through diet and vitamin supplements such as multivitamins) had a 48% increase in hip fracture compared with women in the bottom 20% of vitamin A intake.2
I don't want to leave you with the impression that vitamins and supplements are always dangerous, because they are not. |

But meat, which humans have been going to heroic lengths to obtain and have been relishing for a very long time, is nutritious food, supplying all the essential amino acids as well as many vitamins and minerals, and I haven't found a compelling health reason to exclude it from the diet. (That's not to say there aren't good ethical or environmental reasons to do so.* |

It is imperative that people with asthma eat fruit, preferably three or four pieces per day, because fruit is rich in vitamins and minerals.
A Diet for Asthmatics
Hippocrates, the Greek father of medicine from the fourth century BC, summed up lifestyle and good health in a clear and forthright manner with his advice: 'Let your food be your medicine'.
To improve your general health look closely at the food you eat. If possible, eat organically grown fruit and vegetables and avoid foods with artificial additives and preservatives. |

The soybean itself is a notably inauspicious staple food; it contains a whole assortment of "antinutrients"—compounds that actually block the body's absorption of vitamins and minerals, interfere with the hormonal system, and prevent the body from breaking down the proteins in the soy itself. It took the food cultures of Asia to figure out how to turn this unpromising plant into a highly nutritious food. |

Although we have given details above of foods that are rich in particular vitamins and minerals, you may find that an optimum level of these substances can be maintained most effectively through supplementation.Supplements that contain a variety of ingredients are available in liquid, tablet or powder form from health food stores and pharmacies, and the recommended daily dosage is usually supplied with the particular product. If in doubt about what supplements would do you the most good, consult a practitioner. |

Supplements: A high-quality multivitamin/multi-mineral provides some of the basic vitamins and minerals required for weight loss. Follow the directions on the label for the correct dosage. Take 3-4 g a day of conjugated linoleic acid (CLA), which has been shown to reduce body fat and change body composition in general. Chromium, taken at 500 meg twice a day, helps to relieve cravings for sweet foods and stabilizes blood sugar. Take 100-300 mg of 5-hydroxytryptophan (5-HTP) three times a day to increase feelings of fullness and decreases carbohydrate cravings. |

Dairy foods have a high protein content as well as containing essential vitamins and minerals, particularly calcium. However, research has indicated that eating dairy foods from cows tends to lead to over-production of mucus in the respiratory passages of some people, which obstructs their breathing. Children with constantly blocked or running noses often significantly improve when they stop drinking cow's milk. |

Treatment of celiac disease is very dependent on an accurate diagnosis. However, this is a common and notoriously under-diagnosed condition as there is no one easy test to determine whether a patient has celiac disease or not. A strict gluten-free trial, monitoring symptoms closely, is often utilized. If the condition improves then celiac is a likely diagnosis.
Diet: All food substances containing gluten should be avoided. |

None of the above with preservatives or additives, including added vitamins and minerals. Eggs: Instant egg preparations, eggs from commercially farmed chickens that have been fed antibiotics or commercial feed. Hard-boiled or hard cooked eggs. (Eggs are very nutritious provided they are from free-range chickens, are undercooked, soft-boiled, soft-poached or lightly scrambled.)
Cheeses: Most should be avoided—especially colored, processed, creamed and fancy cheese spreads. White cheese made from unpasteurized milk is okay. |

Also take adequate amount of vitamins and minerals, particularly the B vitamins. Stress reduction is also important in regulating menstrual disorders.
Balancing hormones: If menstrual disorders are linked to a hormone imbalance, current medical treatment involves progesterone, which is given either as a shot or as a daily oral dose for 15 days. Taking one oral contraceptive pill four times a day for five days, followed by a one tablet of a low dose of estrogen once a day for 21 days, usually relieves heavy bleeding. |

The body depends on many vitamins and minerals to act as antioxidants, and the list of compounds that can act as antioxidants is impressively long. The best free-radical protection comes from a diverse intake of antioxidants.
Plant foods are an abundant source of antioxidant nutrients, including vitamins A, C, and E, and the carotenoids. Polyphenols, the active ingredients in green tea, are especially effective antioxidants. |

Burkitt, for example, believed it was the lack of fiber in the modern diet while McCarrison, a British army doctor, focused on refined carbohydrates while still others blamed meat eating and saturated fat or, in Price's case, the advent of processed food and industrially grown crops deficient in vitamins and minerals.
Not everyone, though, bought into the idea that chronic disease was a by-product of Western lifestyles and, in particular, that the industrialization of our food was taking a toll on our health. |

This results in an impaired ability to absorb vitamins and minerals, or malabsorption. Malabsorption generally becomes a serious problem. A diagnosis of celiac disease is confirmed by a biopsy of the small intestine.
Symptoms of celiac disease include diarrhea, nausea, abdominal swelling, foul-smelling greasy stools, weight loss, anemia, joint or bone pain, and skin rashes. Dietary recommendations include eliminating of foods containing gluten or milk products. |

This means you can end up with doses of vitamins and minerals that are at higher or lower levels than what a cat or dog may need.
Nancy Scanlan, DVM, states, "While pets require supplementation for optimal health, it is important to remember that animal physiology is very different from humans." Scanlan adds,
"The safest and most effective means to meet the needs of your pet is to find a species-specific supplement or remedy from a trusted manufacturer who uses only human grade ingredients. |
Preservatives in Pet Foods
Take note that commercial pet food companies usually purchase large quantities of these vitamins and minerals already mixed together, called premixes. This means that your pet is ingesting preservatives from a number of different sources. Artificial flavors, garlic, cheese, and bacon are often added to pet foods to make it more palatable. These flavors, plus the added dyes, which turn the gray matter a bright red, are to give the consumer the impression that the can of dog or cat food is wholesome. |
You can even use frozen vegetables, which retain a higher level of vitamins and minerals than do canned vegetables. Vegetable oil. Depending on the size of the dog, one teaspoon to one tablespoon per day of vegetable oil. Again, flaxseed, sesame, sunflower, safflower, or olive oil (cold compressed).
For breakfast, my dog gets a bowl of oatmeal with a small amount of meat or fruit mixed in. Lunch and dinner are composed of meat, grains, and fruit or vegetables. With either lunch or dinner I add yogurt or cottage cheese for calcium. Plain, nonfat yogurt contains 450 mg. of calcium per cup. |
Vitamin B-l (Thiamine)The B vitamins are water-soluble but, as with all vitamins and minerals, do not go overboard. Vitamin B-l maintains normal function of the nervous system, and improves brain power in pets according to Wendell Belfield, DVM. In addition, some pet owners claim vitamin B-1 works as a flea repellent.
Vitamin B-l is found in beef liver and kidneys, whole grains, bran oatmeal, salmon, wheat germ, peanuts, and kidney beans. Vitamin B-l deficiencies may result in: unsteadiness, decreased learning ability, loss of appetite, fatigue, and vomiting. |
Commercial pet food manufacturers add vitamins and minerals as a "premix," which I find highly questionable. How do heat and pressure in processing affect the availability of these compounds? I also question if the minerals are chelated or do they pass through the body unused if unchelated? (Chelation is the pharmaceutical process of bonding each mineral to an amino acid making it easier to digest and assimilate.) Vitamins are essential to normal growth; they aid in the conversion of food into energy, and form a necessary part of many hormones. |

In Chapter 7, we'll discuss how what we now know about food synergy can help us prevent the top diseases. And just in case your head is swimming with too many examples of food synergy, I've condensed the discussion in the previous five chapters into a section called "Achieving Food Synergy: 12 Rules to Live By. |

We've realized that most of the antioxidant power in foods comes from phytochemicals, not vitamins and minerals," says Weissinger, noting that these recent revelations are largely due to the efforts of scientists like Dr. Liu and Ronald Prior, PhD, and Prior's colleagues at the USDA's Agricultural Research Service. "This nicely explains at least one reason why we need to get our nutrition from plant foods before we reach for any supplements. |

You knew they were nutritious before you read this book, I'm sure, but now you know more about all the powerful phytochemicals they pump into our bodies along with the vitamins and minerals we need more of. Whether it's the two vegetables high in viscous fiber (like eggplant and okra) or the cruciferous vegetables (like kale and broccoli) with all those anticancer organosulfur compounds or the carotenoid family (carrots, sweet potatoes, spinach, etc.) that offers a rich mix of phytochemicals, the message is simple: The more the merrier! Get as many vegetables as you can as often as you can. |

Protein-rich foods are nutrient dense— that is, they provide a wealth of vitamins and minerals in addition to the protein. Likewise, fiber-rich vegetables and fruits are also nutrient dense. Both protein and fiber help to control your blood sugar and your weight.
Looked at another way, it's foolish to waste calories consuming nutrient-poor soft drinks, juices, candy bars, bread, ice cream, pizza, and pasta. These foods have little to offer nutritionally besides sugar and refined carbs, and they have already compromised your health. |

Recommendations include maintaining a well-balanced diet supplemented with vitamins and minerals, maintaining hydration, massage and heat to relieve discomfort, and in cases of frequent cramping, a physical evaluation to rule out impaired circulation. Enzymes can reduce inflammation that may be associated with the cramping, enhance the absorption and digestion of nutrients, and balance the pH in the body. |

Eating Irradiated Food
The routine exposure of fresh food products to radiation has been implemented in many countries for the purpose of extending its marketable life and killing harmful bacteria and parasites. This process kills everything alive within the food, including its natural enzymes. It also reduces the effectiveness of many vitamins. |
