These foods contain antioxidant vitamins and minerals such as beta-carotene, selenium and vitamins A and E that combat the formation of free radicals.
For example, in a study comparing 351 men who had bladder cancer with 855 men who didn't have the disease, researchers at the State University of New York at Buffalo found that men who ate the most fruits and vegetables had a 60 percent lower risk of developing this type of cancer, which strikes 38,000 men annually. The researchers speculate that beta-carotene and other carotenes are the most likely disease fighters.

As we age, our requirements for certain vitamins and minerals actually increase," says Jeffrey Blumberg, Ph.D., associate director of the U.S. Department of Agriculture Human Nutrition Research Center on Aging at Tufts University in Boston. "We tend to eat less food overall on a daily basis. So if your diet is already lacking a little in certain nutrients, as you get older, you

Moreover, a very low calorie diet can also cause deficiencies in a whole host of nutrients, ranging from protein to vitamins and minerals; thus, crash dieters' overall health may suffer. There's another serious impediment to success. Dieters find their basal metabolic rate, which is already lower due to age, being forced even lower by the self-induced starvation process they're undergoing. This is totally counterproductive, for the higher the metabolic rate, the faster fat is burned off. Such people find it a cruel irony that via caloric restriction alone, it becomes even harder to lose weight. |

Taken in extremely high doses, many vitamins and minerals can be toxic," says Diane Grabowski, R.D., nutrition educator with the Pritikin Longevity Center in Santa Monica, California. "They can interfere with the functioning of vital organs like the heart, liver or kidneys. Or they can produce any number of harmless but aggravating side effects such as heartburn, nausea or frequent urination."
Research is in the works to determine the exact levels of each vitamin and mineral needed for optimal health. |

There is a substantial amount of Vitamin E found in lettuce, especially in the Romaine variety, which contains more vitamins and minerals than head (iceberg) lettuce. The high percentage of iron in lettuce makes this food desirable for anemic conditions.

Garlic aficionados will be particularly pleased to learn about garlic's special healing powers. Garlic's health benefits range from thinning blood and lowering cholesterol to fighting infection and even cancer. A French researcher claims a substance in garlic promotes release of the neurotransmitter serotonin, producing a calming effect. |

As Senator William Proxmire phrased it:
The FDA and much, but not all, of the orthodox medical profession are actively hostile against the manufacture, sale and distribution of vitamins and minerals as food or food supplements. They are out to get the health food industry and to drive the health food stores out of business. And they are trying to do this out of active hostility and prejudice.2
The subject of psychedelic drugs constitutes perhaps the final madness in the FDA's insane asylum of double standards. |
Instead, the agency has spent its time and millions of the taxpayer's dollars establishing arbitrary daily dosages for harmless vitamins and minerals.1
Congressman Hosmer has hit the bull's eye. The danger to public health does not lie in organic food supplements or vitamins sold in health-food stores. It lies in the vast inventories of toxic man-made drugs. Nothing recommended by a health lecturer ever produced such tragedies as thalidomide babies. Five percent of all hospital admissions are the result of adverse reactions to legally acquired prescription drugs. |
Dextra Fortified Sugar, for example, the FDA had ruled that it was "misbranding" to fortify sugar with vitamins and minerals and still call it sugar. But the court ruled otherwise, pointing out:
The basic flaw in the government's case is that it is seeking, under the guise of misbranding charges, to prohibit the sale of a food in the market place simply because it is not in sympathy with its use.
Usually there is much more going on in these cases than over-zealousness on the part of a few bureaucrats. Pretending to protect the public is the favorite cover for hidden agendas. |

Nettle is an excellent source of many vitamins and minerals and may in fact be one of the most nutrient-rich herbs available.6
History
Nettle has been applied medicinally and eaten as a food since ancient times and has a rich history of traditional use throughout Europe. Its extensive medicinal applications have been documented since the first century, when Pliny the Elder noted the ability of nettle leaf to stop bleeding. In the first and second centuries, the physicians Dioscorides and Galen, respectively, recommended nettle as a diuretic, to stop nosebleeds, and for infected wounds. |

But no significant connection with liver cancer deaths was found for consumption of beta-carotene or other vitamins and minerals (11).
People who had had a previous non-melanoma skin cancer showed no decrease in the re-occurrence rate after being given beta-carotene over a five year period (12).
Toxicity: While vitamin A in high doses is toxic, beta-carotene can be taken in large amounts without any appreciable harm, besides turning the palms and soles orange.

Today, herbs, as well as vitamins and minerals, are classified as dietary supplements in the United States.
The Introduction of DSHEA
The FDA and the U.S. herb industry have locked horns repeatedly during the past 30 years. In 1994, the U.S. Congress unanimously passed a bill called the Dietary Supplement Health and Education Act (DSHEA), which defined dietary supplements and forbade the FDA from treating them as food chemicals or drugs unless manufacturers made drug claims for their products. |

Others who may benefit from vitamin supplements include:
* Infants—particularly those who are not breast-fed and therefore may be getting uncertain amounts of various vitamins and minerals.
Pregnant or lactating women—pregnant women often have reduced levels of a number of vitamins, even though their caloric intake is usually greater than normal, and therefore, they are getting more foods with more vitamins in them. Vitamin supplements are often prescribed. Iron, as a mineral supplement, is almost always prescribed as well. |

Multivitamins. Women need a natural multivitamin/mineral supplement containing higher amounts of magnesium than calcium, and high amounts of B and C vitamins. A good multiple vitamin helps build the adrenal glands, which lessens emotional symptoms.
Vitamin E. This vitamin is known for its ability to rejuvenate the reproductive system and alleviate hot flashes. |

Animal foods contain protein but no carbohydrates (with the exception of milk and its products); sugar is pure carbohydrate without protein; and fruits and vegetables are high in vitamins and minerals but too low in protein and fats. That is why grain "comes closer than any other plant product to providing an adequate diet."28
Their protein content makes grains body builders, while their complex-carbohydrate content ensures a steady blood sugar level supportive of intense mental activity. |

Take a moderate-dose multiple vitamin and mineral supplement that supplies a wide variety of vitamins and minerals, including the B vitamins, calcium, magnesium, chromium, copper, iron, manganese, molybdenum, selenium, and zinc. Follow the guidelines in chapter 14 for choosing the best supplement. Vitamin E is safe in adult doses up to 400 IU, and vitamin C is safe up to 1,000 milligrams for most adults.
Avoid supplements labeled as "stress" or "therapeutic" formulations. At best, these products are a waste of money. |
Penland and his colleagues also have investigated other vitamins and minerals in relation to PMS sufferers, but the results are inconclusive. In their study, low blood levels of iron, the B vitamins, and zinc were most common in women suffering from depression, mood swings, poor concentration, and breast pain. "These findings indicate that there might be a relationship between diet and PMS, especially with iron, but it is too soon to make recommendations," says Dr. Penland. |
Optimal levels of all vitamins and minerals cannot be guaranteed when calorie intake is this low, so choose a moderate-dose multiple vitamin and mineral supplement when following any low-calorie diet. |
Other Vitamins and Minerals: In the Pink or Feeling Blue?
Getting some, but not enough, of several other vitamins, including vitamin Bi, vitamin B2, niacin, folic acid, and vitamin B12, and vitamins C and D also might contribute to depression.
Folic acid: A deficiency of folic acid, a B vitamin essential for normal nerve cell growth and maintenance, causes several personality changes, including depression. Poor folic acid intake is found in up to 38 percent of people diagnosed with depression, while some of these people show improvements in mood when they consume more folic acid—rich foods. |
Calming Foods
The following snacks are low-fat, low-calorie, and packed with vitamins and minerals that help soothe a stressed body. Keep in mind that the total diet is what is important. No one food can transform an otherwise poor diet into a great eating plan. |
In their srudy, menstrual symptoms were compared to blood levels of different vitamins and minerals in PMS sufferers. Results showed that low blood iron levels were mosr common in women suffering from depression, mood swings, and breast pain. Mood swings and poor concentration also were associated with low intakes of vitamins A, B2 and B6, folate, calcium, copper, and zinc. Even carotenes, such as lycopene and lutein, fluctuate throughout the menstrual cycle, possibly contributing to symptoms. |
