Empty foods such as sugar and alcohol are devoid of the vitamins and minerals needed for their metabolism.
The ability to burn stored fat in the body is important for losing weight. Riboflavin, niacin, biotin, and vitamin B]2 are all needed to prepare stored fats for burning in the metabolic machinery of the body. Even if these vitamins are present in sufficient amounts, the fats must be synthesized with acetyl-coenzyme A (also known as acetyl-CoA) in order to be burned. Pantothenic acid is a necessary component of acetyl-coenzyme A. |

Avoid isolated vitamins and minerals
I also recommend that you move away from isolated vitamins and minerals. So forget about those cheap, low-cost bottles of vitamin C, vitamin E or those B vitamins you might find at the wholesale clubs, pharmacies or grocery stores. These are typically not going to do you very much good, because your body doesn't need just vitamin C; your body needs a whole complement of vitamins from a lot of different sources. If you want vitamin C, go with whole-food concentrates. |

Nickel works with iron and sulfur to release energy from carbohydrates.
The vitamins and minerals that are needed for weight loss that may be deficient in typical diets include pantothenic acid, magnesium, vitamin B6, iodine, selenium, iron, copper, and nickel. If we are deficient in any one of these vitamins or minerals, we may not be able to efficiently burn nutrients for energy. The inability to burn carbohydrates leads to more stored fat. The inability to burn fat can contribute to excess body fat.
Appendix C: Antioxidants
Antioxidants neutralize the damaging effects of free radicals. |
Appendix E: Alcoholism
Alcoholics have special needs for vitamins and minerals. Alcoholics often get smaller amounts of nutrients because they consume less food. Many alcoholic beverages can be seen as "empty calories" because they supply energy without the nutrients needed to burn that energy.
Alcoholics may be more sensitive to excesses of certain nutrients. People with a history of liver disease or alcoholism may be more susceptible to the adverse effects of excessive niacin intake. |
Certain vitamins and minerals play critical roles in bone mineralization and strength.
In older men and women, long-term intakes of preformed vitamin A can be associated with increased risk of osteoporosis. Preformed vitamin A includes all forms except the beta-carotene form. Levels of only 5000 IU (1,500 meg) are enough to increase risk. This is well below the tolerable upper intake level, which is set at 10,000 IU (3000 meg) per day. In contrast, intake of the beta-carotene form of vitamin A is not associated with any increased risk of osteoporosis. |
Water's Functions
A solvent and transporter for many vitamins and minerals. A cushion and lubricant for joints, eyes, spinal cord, and the amniotic sac. Used to cool the body.
Needed for blood volume and cellular structure. Cleans the body of wastes.
About 60 percent of the body weight of adults is comprised of water. Although it may seem that fat is more watery, it turns out that lean tissue contains more water. Lean tissue contains three-quarters water, while fat contains about one-quarter water. |
It is important to note that the ability of the body to burn nutrients for energy may be limited by deficiencies of certain vitamins and minerals.
Much of the modern diet is made from refined grains such as white flour. White flour is commonly found in breads and noodles. White flour is routinely enriched with certain nutrients. Other nutrients are reduced in the refining of the grains, and they are not added back in the enrichment process. Enrichment of white flour normally consists of adding thiamin, riboflavin, niacin, folic acid, and iron to the refined grains. |

Then we have a list of vitamins and minerals that are added to the product. It doesn't say what the source of these are, but chances are, these are not plant-sourced vitamins and minerals. These are probably the least expensive commercially produced vitamins and minerals available on the market.
So essentially, what you have here with Ensure, is a predominantly sugar-water product that has been fortified with a few vitamins and minerals. With that in mind, let's go back to the front label and take a look at all of the claims. |

Why vitamins and minerals Are So Important
Vitamins and minerals act as catalysts to the digestion and metabolism of food. Vitamins are organic bio-molecules that act in small amounts as catalysts in chemical reactions. When acting as a catalyst, vitamins are bound to enzymes and are called cofactors. Because vitamins act with enzymes as cofactors, they make chemical reactions in the body happen?

Even fresh and wholesome foods straight from the fields have lower quantities of these essential vitamins and minerals than they had fifty or one hundred years ago. More nutrients are lost in transit from farm to table.
Recent analyses of nearly a dozen popular diet plans show that none of them provide 100 percent of the RDAs for thirteen vitamins and minerals. What's more, the RDAs are a one-size-hts-all approach to nutrition, and each of us has different requirements. |
Like carbohydrates, protein, and fats, vitamins and minerals are essential to good health. They are considered micronutrients {micro = small) because they are needed in relatively small quantity compared to the macronutrients.
Vitamins and minerals function as cofactors, or chemical helpers, in the chemical processes that occur at every moment in every one of the three trillion or so cells of your body. Getting enough of these micronutrients into your body will boost many body functions, bringing broad improvements in mental and physical health. For instance:

As an asthmatic you need to ensure your diet contains plenty of vitamins and minerals, to build up your body's immune system. Here is a chart to give you some more information about the types of food you will find the vitamins in.
Following is a selection of those vitamins, minerals and other trace substances which should be part of your regular diet. We recommend that you should also supplement your diet with extra vitamins and minerals that are of particular benefit to asthmatics, and we cover these in greater detail on pages 108-119. |

After several more complex steps requiring consecutive methylations and the interaction of several enzymes—and the vitamins and minerals I described—carnitine is made in the body. However, it is important to note that dietary deficiencies of L-lysine or in any of the vitamins and minerals mentioned will result in inadequate synthesis of L-carnitine. This is why dietary deficiencies of L-carnitine and/or the cofactors for its biosynthesis are extremely important. These cofac-tors must be obtained from the diet. |

Bell shares my view that saline alone might do as much as saline loaded with vitamins and minerals. It certainly would be a lot cheaper. But like the psychotherapists in the 1960s, the doctor who chooses infusion therapy is never willing to devote the time or resources to find out if his treatment actually works. And the treatment remains totally unproven. Unfortunately, there is not one bit of evidence that flooding the body with vitamins and minerals has efficacy in any illness or disease. |

The United Nation's Codex Alimentarius commission actually is staffed by people in the medical community whose main goal is to block our access to vitamins and minerals within the therapeutic range, as well as to all the most innovative dietary supplements, especially food based products, and even to organic food. If they have their way we will only be able to buy at highly inflated prices ?with a doctor's prescription ?low levels of vitamins and minerals.

Raspberry leaf is a wonderful, nourishing uterine and pelvic tonic that is high in vitamins and minerals. Combine equal parts of these dried herbs and drink an infusion made from 1 tsp per cup of water, or take 2 ml of a combined tincture, twice a day.
Heavy-flow formula: Black haw root and stem bark relieve uterine and intestinal spasm, thereby reducing painful menstruation and flow. Chaste tree berries, which are astringent and drying, normalize the menstrual cycle by regulating the secretion of hormones from the pituitary gland. Cramp bark calms uterine spasm and relieves cramping. |

Finally, there has been a major change in our diet, including a massive increase in exposure to vitamins and minerals through fortified foods as well as a shift from grain- to corn-based nutrition. There is some evidence that changes in the American diet may have contributed to the increase in asthma, which I review on pages 138-140.
There are two categories of asthma: allergic, also known as extrinsic asthma, and nonallergic, or intrinsic asthma. Allergic asthma, the most common form, which affects 20 million individuals in the U.S. |
And yet vitamins and minerals are no more natural than medications. They are all chemically manufactured in factories. Vitamin and supplement makers are big companies, often conglomerates, with aggressive marketing teams and big advertising budgets. They thrive on the absence of information.
Conventional doctors often look the other way, because they don't want to be accused of being out of touch with patients or too focused on technological or pharmaceutical solutions. |
The RDA determined how many vitamins and minerals we need to take in daily in our diets. (This is not to be confused with the food pyramid, developed by the USDA in the 1950s, which tells us how much of the different food groups, like fruits, vegetables, cereals, meat, and dairy products, we need.) Most of us are familiar with the RDA from our childhood days of reading the back of our cereal boxes during breakfast time. What most people don't understand is that the authors of the RDA only knew what degree of deprivation caused illness. |

As we've seen, processing whole foods—refining, chemically preserving, and canning them—depletes them of many nutrients, a few of which are then added back: B vitamins in refined flour, vitamins and minerals in breakfast cereal and bread. Fortifying processed foods with missing nutrients is surely better than leaving them out, but food science can add back only the small handful of nutrients that food science recognizes as important today. What is it overlooking? |

Vitamin A and beta-carotene
Vitamin A, or retinol, is essential for keeping the mucous membranes lining the respiratory passages, lungs and digestive system healthy, and for good vision. It improves resistance to infection, and is necessary for bone and blood vessel growth. Vitamin A is also responsible for maintaining an active thymus gland (part of the immune system). |

D or pregnant women who need folic acid. We need to take care of all of the groups in our population." Since that time the European Union has placed a limit on the amount of vitamins and minerals that can be added to food.
And it isn't only in Europe. Feskanitch and colleagues followed 72,337 nurses from 1980 to 1998 and showed that women in the top 20% of vitamin A intake (through diet and vitamin supplements such as multivitamins) had a 48% increase in hip fracture compared with women in the bottom 20% of vitamin A intake. |
